According to that list, the original Xbox disc of NFS Carbon unfortunately isn't on the compatibility list of Xbox titles that are playable on the Xbox 360. You could look at emulating the game on a computer with better graphic options, as EA and MS don't really seem to care enough about the old NFS games.
